When shopping around for a gas range oven, you may come across the term BTU. And if you're not familiar with gas ranges, you're probably wondering what it means and how it relates to stoves. 


BTU stands for British Thermal Unit and is a measurement of heat. And when it comes to cooking, some burners have different BTU than others, which comes in handy when cooking different dishes. BTU is only used for measuring gas ranges, and electric stoves use wattages to measure the amount of heat. BTU also measures the heat inside the oven, and most ovens have a rating of 16,000 BTUs.  


So how do BTU's affect burners? Often the burners on your stove have different ranges, and on newer ranges, there is at least one high BTU range, two middle ranges, and one low range. 


Here is a better way to understand how these different types of ranges work.


  • Low range: The output of these burners can range from 500-2,000 BTU, making it the perfect burner for simmering. They also have better heat control which will prevent food from burning.
  • Mid-range: With a range of 2,000-10,000 BTU, these burners are ideal for everyday cooking such as frying. 
  • High: The highest BTU range for this burner can vary from 12,000 to 18,000. You would use this burner for any high heat cooking such as searing and stir-fries. Professional ovens can go up to 25,000 BTUs.
  • Flexible: Some ovens come with a burner that has a range of 1,000 to 15,000 BTUs. These burners are perfect for when you need to switch between high heat and low heat. An example of this would be anytime you are cooking soups or stews. 

Older gas ranges have less variety, with all burners having 10,000 BTUs, which is good enough for everyday cooking. 


Whenever you have a stove with a high BTU range, your kitchen must have proper ventilation. So, if you are thinking about switching to a gas range, you should have your vent looked at to ensure it can handle the high heat emitted. 


You may also see BTU mentioned in your air conditioner and gas furnace.
